Irish Moss Strawberry Mousse and Gelato Ice Cream

Strawberry Mousse with Ice Cream from Amore Bio Gelato

Time for dessert? While it is fresh strawberry season it would be a pity not to prepare another Irish Moss Mousse. It's But first, I'll be honest. I didn't mnake the ice cream myself. I left that to the experts at Amore Bio Gelato in Poznan where I bought their excellent homemade Italian ice cream.

Ingredients for the strawberry mousse:
10g dried carragheen (Irish moss)
20 large strawberries
1l water
2tbs honey or sugar

Preparation:
Add the carragheen to the water in a saucepan, bring it to the boil and simmer for 15-30 minutes until about half of the water has evaporated. Add the strained water to the strawberries and honey/sugar and blend while still hot. Immediately pour the mousse into your dessert bowls and allow to cool before refrigerating if you want to serve the mousse cold.

Oatmeal porridge with dillisk (dulse)

It's been a while since I last posted here so it's time for something new. Here's something simple just to get back into the swing of things: Dillisk porridge!

This is a nice combination if you're looking to start the day off with a healthy breakfast. All you need to do is soak the oats in water (preferably overnight). You can add the dillisk and soak them together or soak the dillisk separately, then cut it into smaller pieces and add it to the porridge oats. Put the soaked porridge and dillisk in a saucepan, bring it to the boil and allow it to simmer for about 5 minutes. That's it. There's no need to add salt.

This dish is perfect for anyone doing endurance sport training as it provides lots of protein, fibre, nutrients etc. The dillisk is high in potassium and it contains vitamin B-12. This makes it an important foods source for vegans. This dish should also help anyone who is trying to lose weight, stabilise blood sugar levels and pressure.

Laverbread and dillisk

It's Ireland v Wales in this year's Six Nations rugby tournament today. With that in mind I've decided to try my hand at a Welsh national dish as well as throwing in an Irish delicacy to balance the books. The Welsh dish I'm talking about is laverbread. Technically speaking it is not a bread at all as its main ingredients are laver (nori) and oatmeal. The Welsh would include it in a Welsh breakfast, with seafood or as a spread on bread or toast.

Laverbread cakes
Ingredients:
50g dried laver (nori)
Oatmeal - I used up about 200g, recipes on the net suggest using 25% oatmeal to laver. I used more than that to make it less sticky.
2 crushed cloves of garlic
1 pack of streaky bacon
Pepper

Roast Laverbread

I broke up the dried nori sheets into pieces and boiled them in water until they had a texture similar to mushy spinach. I cut up the streaky bacon into small bits and fried it. I then mixed all of the ingredients listed above in a bowl and rolled the laverbread into small cake shapes before frying the first batch in the bacon fat. The rest of the laverbread cakes were oven roasted. I prefer the oven roast ones though the tradition is to fry them.

This is very simple to make. Rub some olive oil lightly into dillisk which has been chopped into small pieces. Sprinkle with linseed and sesame seed and roast in high temperature for a few minutes.

This is also a simple and quick dish. Fry the dillisk in sesame oil in a pan for a few minutes until it turns brown. If you over fry it, it will turn black so avoid that. Sprinkle with sesame seeds and pepper if you wish.

Sweet Kelp Brown Bread

A loaf of brown bread with sweet kelp seaweed
I've just finished baking my first loaf of seaweed bread. I based it on a recipe I found here and added some sweet kelp.

Ingredients used:

400g of wholemeal flour
100g of plain white flour
7g packet of dried yeast
1 tbsp of soft butter
8g of dried sweet kelp
A mix of linseed, sesame, sunflower and pumpkin seeds
About 300ml of lukewarm water

I followed the instructions by mixing together the flour, yeast, butter, seeds and seaweed in a large bowl before adding most of the water. I then kneaded the dough for about 8 minutes, adding a little water to pick up the dry dough from the surface of the bowl. I set it aside covered for an hour for the yeast to do its job. I also kneaded it briefly at this stage to remove any large air bubbles and again left it for another hour. I added some more seeds to the top before baking in the oven at 230C for about half an hour.

Homemade seaweed sausages

I have always wanted to try to make homemade sausages. The biggest problem in getting it right was the need for sausage casing. I've never liked sausage casing and would typically remove the casing before frying or grilling the sausages. Carrageen Moss has fixed that problem. Due to its natural gelling properties I concluded that casing wouldn't be necessary and so it has transpired. I also added generous amounts of kelp and wakame for a real seaweed flavour. I decided to prepare two batches of sausages. The first batch being for traditional meat eaters followed by a separate seaweed veggie batch.

Seaweed Pork Sausages Ingredients:

Half kilo of pork shoulder and half kilo of pork loin (the original recipe I was following calls for equal amounts of shoulder and back but the only available back bacon in Polish shops was smoked so I took a risk on the leaner loin but it worked out just as well).

10g dried carrageen moss

10g mix of wakame and kelp

Spices: savory, sage, allspice, white pepper, Salt
Breadcrumbs (more or less 10% by weight)

Ingredients


Mincing the pork
Soak the wakame and kelp and leave to rehydrate.Boil the carrageen in a pot containing about a liter of water until half of the water has evaporated off. Strain out the remaining liquid. There will be enough for both batches of sausages. Mince the meat. Put the meat through the mincer a second time if you prefer finer mince. 
Remove the kelp and wakame from the water and put it through a food processor to cut it up into small pieces. Add about half of the seaweed and spices to the meat. Add some salt and about half of the carrageen liquid.
Mix in the breadcrumbs until you have a good consistency. Finally roll the meat into sausages. A fine layer of breadcrumbs over the rolling surface will keep the meat from sticking to it. The sausages are ready for frying, baking or grilling. If kept refrigerated these sausages will stay fresh for a few days.

Rolled seaweed pork sausages

Seaweed veggie suasage ingredients (click here for the original recipe):

350g peeled carrots
1 small onion
175g cheddar (I used both kinds finely chopped using a food processor)
Wakame and kelp finely chopped (also in the food processor)
220g breadcrumbs
Carrageen (the original recipe used a large egg instead)
2tbsp finely chopped parsley
2tbsp finely chopped sage
Pepper
Flour for dusting

Rolled seaweed veggie sausages
The preparation of the seaweed veggie sausages is not dissimilar to the method described above for the seaweed pork sausages. Salt is not really needed because of the cheddar. I also added savory and allspice in addition to the parsley and sage. I found that the flour was very much needed in rolling the sausages.

Asimov przewidział, że będziemy jeść wodorosty

Z okazji Wystawy Światowej w Nowym Jorku w 1964 r, Isaac Asimov, amerykański pisarz science-fiction i profesor biochemii, opublikował w New York Timesie artykuł, w którym zawarł swoje przewidywania na temat tego, jak będzie wyglądać życie na Ziemi za 50 lat - czyli w roku 2014, który właśnie się zaczął. Wiele z jego proroctw się spełniło, jak m.in. urządzenia bezprzewodowe, komunikatory audiowizualne, automatyzacja przemysłu.
Asimov przewidywał również problemy z wyżywieniem rosnącej populacji i przepowiadał wykorzystanie alternatywnych źródeł żywności, w tym wodorostów. Pisał o tym, że dostępna będzie przetworzona żywność z drożdży i alg - zapowiadał, że na Wystawie Światowej w roku 2014 otwarty będzie Bar Algowy, w którym podawać będą niby-indyka i pseudosteki. Przewidział również opór konsumentów przed takimi nowinkami ;)

Seaweed dressing

Seaweed dressing on tomato and onion
Organic Irish Seaweed Dressing
You can garnish any dish of your choice with seaweed dressing. You can use it in addition to salt and pepper or as a replacement for salt and pepper. The dressing contains dried seaweed powder of Irish wakame, dillisk, carragheen, kelp and spirulina. According to the AlgAran packaging 100g of the product contains:

Proteins - 11g
Carbohydrates - 10.6g
Fibres - 39g
Sodium - 2.8g
Vitamin B6 - 0.5mg
Vitamin B12 - 2.0µg
Calcium - 5984mg
Iron - 25mg
Magnesium - 948mg
Zinc - 2.3mg
Iodine - 30µg


Mixed Seaweed Salad with Spinach

Ingredients

Mixed dried seaweed salad 5g
Fresh spinach leaves
Feta cheese
pumpkin seeds (pan roasted)
Dried figs
Vinaigrette dressing (olive oil, lemon juice, salt, pepper)

Mix all ingredients together to serve :)

Sweet kombu Vegan Soup

Ingredients

10g of dried sweet kombu
1 courgette, chopped
1 big onion, chopped
1 celery stick, chopped
1 carrot, chopped
2 potatoes, chopped
4tbs olive oil
Salt and pepper
4 cups of water
Parsley

Soak the dried seaweed in fresh water and chop it.

Heat the oil in a saucepan. Add onion, celery, carrot, potatoes and sweet kombu. Fry over low heat for 5 minutes.Add the water and the courgette. Cook for 30 minutes, always stirring. Add extra water if needed.

Season with salt and pepper, add the parsley, lower the heat, cover and simmer for 10 minutes. Serve on a bed of toasted brown bread.

Serves 4

Barley, Leek and Wakame Soup

Ingredients

2 leeks, chopped
10g dried wakame
300g pearl barley
1.5ltr vegetable stock
2tbs of parmesan cheese, freshly grated
2tbs of olive oil
Salt and pepper

Bring the vegetable stock to the boil in a saucepan.

Heat the oil in another saucepan. Meanwhile, soak the dried seaweed in fresh water and chop it. Add the leeks and chopped wakame and cook over a low heat, stirring occasionally until golden brown.

Add the barley and pour in the stock. Season with salt and simmer over a low heat for 1.5 hours or until the barley is tender.

Add pepper. Drizzle with olive oil and serve with parmesan.

Serves 4

I made this soup during the week and it worked out really well. The only change I'd make to the original recipe would be to reduce the amount of barley to 100g. I used 200g and it was still too much.




Kombu (Kelp) Stew

Ingredients

10g dried kombu
2 aubergine, thickly sliced
2 courgettes, chopped
1 big onion, chopped
1 celery stick, chopped
1 cup of tomato passata
100g of chopped green olives
4 tbs of olive oil
Salt and pepper

Soak the dried seaweed with fresh water and thinly chop it. Heat the oil in a saucepan. Add the onion, celery and kombu. Cook over a low heat for 5 minutes. Add all the other ingredients (except courgettes) and cook for 30 minutes, always stirring. Add extra water if needed. Season with salt and pepper, add the courgettes, lower the heat, cover and simmer for 20 minutes. Serve on a bed of brown bread.

Bruschetta z pomidorami i spiruliną

Składniki


10g irlandzkiej spiruliny, po wypłukaniu
4 ząbki czosnku
8 kromek chleba wiejskiego
8 dojrzałych pomidorów pokrojonych w kostkę
4 łyżki oliwy z oliwek
Sól i pieprz
Mozzarella (opcjonalnie)
Podgrzać oliwę w rondlu. Dodać jeden rozdrobniony ząbek czosnku. Wodorosty osuszyć, pokroić i wrzucić na oliwę. Obsmażyć na chrupko na wolnym ogniu przez ok. 5 minut.

Opiec kromki pieczywa z obu stron w piekarniku. Jeszcze gorące posmarować ząbkiem czosnku i ponownie na chwilę włożyć pod opiekacz. Po wyjęciu na kromkach ułożyć pomidory.

Doprawić solą i pieprzem, skropić oliwą, posypać spiruliną. Na wierzchu można ułożyć plastry mozzarelli.

Warzywa z serem i sea spaghetti (Greens with cheese and Sea Spaghetti)

Składniki:

4 ziemniaki
200g młodego groszku (w strączkach)
2 zielone papryki
10g wodorostów Sea Spaghetti
200g startego sera typu cheddar
2 łyżki oliwy z oliwek, 1 łyżka octu (winnego, jabłkowego)
Sól i pieprz

Włączyć opiekacz (grill). Namoczyć suszone sea spaghetti w świeżej wodzie. Ugotować ziemniaki w lekko osolonej wodzie do miękkości. Odlać wodę, obrać i pokroić w ósemki. Ugotować groszek w lekko osolonej wodzie do miękkości, odcedzić. Ugotować sea spaghetti w lekko osolonej wodzie z dodatkiem octu przez 10 minut, następnie odcedzić i pokroić. W międzyczasie umieścić papryki na blasze wyłożonej papierem do pieczenia i opiec, często przewracając. Przestudzić, następnie obrać, usunąć nasiona i pokroić na duże kawałki. W salaterce umieścić ziemniaki, groszek i plastry papryki, pokropić oliwą z oliwek, dodać sea spaghetti oraz ser. Doprawić solą i pieprzem, delikatnie przemieszać i podać.

Mus truskawkowy z mchem irlandzkim (Strawberry Mousse with Carragheen)

Składniki:

20 dużych truskawek
1 litr wody
10g suszonego mchu irlandzkiego (carragheen)
2 łyżki miodu

Wypłukać suszone wodorosty w świeżej wodzie i usunąć pozostałości skorupiaków/muszli.

Włożyć do garnka z litrem wody, doprowadzić do wrzenia i gotować przez 10-15 minut, aż około jedna czwarta płynu odparuje. Przecedzić usuwając wodorosty (które można wykorzystać jako nawóz w ogrodzie).

Przecedzony płyn zacznie tężeć po ostygnięciu, więc ważne jest, by od razu dodać truskawki i miód. Miksować przez kilka minut. Wlać mus do czterech salaterek i udekorować liśćmi mięty. Podawać schłodzony.

Porcja na 4 osoby

Wersja alternatywna z mlekiem i likierem Baileys:

Zamiast wody użyć 500ml mleka. Namoczyć mech carragheen w mleku przez 10 minut. Doprowadzić do wrzenia i gotować na wolnym ogniu przez 20-30 minut. Przecedzić płyn przez sito. Dodać miód i baileys do smaku (ok. 10ml). Zostawić do stężenia jak w przepisie powyżej. Udekorować sproszkowanym kakao.

What I did

I used mixed fruit instead of strawberries. I definitely put too much fruit into it as it wasn't able to set fully but it still worked with ice cream. The advantage of the result I had was that I was able to make healthy jam sandwiches for the kids :)

Sałatka z warzywami morza i serem feta (Mixed Seaveg and Feta Salad)

Składniki:

1 opakowanie mieszanki sałat
400g sera Feta pokrojonego w kostkę
100ml śmietany kremówki
sok z 1 cytryny (bez pestek i kawałków miąższu)
1 łyżka pokrojonej mieszanki wodorostów
1 łyżka pokrojonej natki pietruszki

Namoczyć mieszankę wodorostów (morski mix sałatkowy lub po prostu kilka typów wodorostów) w czystej wodzie, odcedzić i wysuszyć w piekarniku nastawionym na niską temperaturę, aż wodorosty staną się chrupkie. W salaterce umieścić sałatę i ser feta. Wymieszać śmietanę i sok z cytryny. Dodać mix wodorostów i doprawić solą do smaku. Polać sałatę sosem. Wymieszać starannie i przybrać natką pietruszki.

Tagliatelle z wodorostami Dillisk


Składniki:
1,5 łyżki pokrojonej natki pietruszki
2 ząbki czosnku obrane i rozdrobnione (przeciśnięte przez praskę)
duża szczypta mielonego czarnego pieprzu
12 łebków pieczarek
2 łyżki oliwy z oliwek extra virgin
300g suchego makaronu tagliatelle
1 łyżka pokrojonych wodorostów dillisk

Usunąć łyżeczką brązowe blaszki ze spodu pieczarek, wyrzucić, resztę pokroić. Wlać oliwę do dużego rondla na średnim gazie; dodać pieczarki, dillisk i czosnek. Smażyć przez 5-6 minut aż grzyby zmiękną. Zmniejszyć ogień i dusić mieszając przez ok. 10 minut. Dodać pieprz i sól, mieszać ciągle aż sos zgęstnieje. Wmieszać pietruszkę. Ugotować makaron zgodnie z przepisem na opakowaniu. Wyłożyć na talerz, na wierzchu polać sosem. Można udekorować natką pietruszki.

Sos z papryki i kombu (pepper and kombu sauce)

Ten sos dodaje smaku i koloru daniom głównym

  • Pokrojone wodorosty Kombu, 1 kopiata łyżeczka
  • Oliwa z oliwek
  • 1kg papryki (czerwonej, żółtej i pomarańczowej)
  • 1 1/2 łyżeczki czosnku przepuszczonego przez praskę
  • 2 łyżeczki octu słodowego
  • 1 łyżki świeżego soku z cytryny
  • 1/2 łyżeczeki cukru
  • Ok. 1/2 łyżeczki solu, do smaku
  • Pieprz cayenne do smaku
1. Rozgrzać piekarnik (górna grzałka, opiekacz) i cienko posmarować blachę do pieczenia oliwą z oliwek. Umieścić całe papryki na blaszce razem z wodorostami Kombu, namoczonymi uprzednio w zimnej wodzie.
2. Piec papryki i wodorosty przez ok. 15 minut obracając je co 5 minut.
3. Przełożyć do miski razem z sosem, który wydzielił się podczas pieczenia, i nakryć talerzem. Studzić przez ok. 45 minut.
4. Obrać papryki i usunąć nasiona razem z łodygami. Zmiksować całość i przełożyć z powrotem do miski. Dodać pozostałe składniki, sól i pieprz cayenne stosownie do smaku.
5. Podawać schłodzony lub w temperaturze pokojowej. Przechowywać w szczelnie zamkniętym opakowaniu w lodówce.
